As my part in trying to get a little more healthier. Here is the recipe I did for a quick and healthy chicken stir fry that was shown on TV on ABC 33/40. My last few cooking posts have all involved desserts so this is my first recipe that is not a dessert.
- 2 tablespoons cornstarch
- 1 3/4 cups chicken broth
- 1 tablespoon soy sauce (low sodium)
- 1/2 teaspoon ground ginger
- 4 cups cut-up fresh or frozen vegetables (broccoli florets, sliced carrots, sliced celery and green onions cut into 1-inch pieces or green or red pepper strips)
- 1 pack of fresh chicken for stir-frying. or get a pack of chicken tenders and cut up.
- 1 cup regular long-grain white rice; I used a boil in bag of white rice
Stir the cornstarch, 1 cup broth, soy sauce and ginger in a small bowl until the mixture is smooth. Then cook the chicken and put off to the side. Then cook the veggies with the remaining broth (I used a bag of frozen vegetables made for stir-frying.)
After you let the stuff simmer pour in the cornstarch mixture and stir until it thickens. Stir in the chicken and stir until hot. Serve over a bed of white rice.
Very yummy and healthy too!
